Cereal Cookies

A friend recently asked for this recipe...and it's so good that I thought I would share it with all of you. Here's to cookies that are healthy but don't necessarily taste like it! :)

Cereal Cookies
1 1/2 c. butter
1 1/2 c. honey
3 T. molasses
1 T. vanilla
3 eggs beaten
2 t. baking powder
2 t. baking soda
1 1/2 t. salt
4 c. whole wheat flour
2 c. oatmeal
2 c. cornflakes (or other cereal--Honey Bunches of Oats work too)
1 c. coconut
1 c. chopped nuts
1 c. chocolate chips

Optional: 1 c. sunflower seeds, 1 c. flax seeds, another cup of a different sort of nuts...have fun and experiment! I personally like to use a little more molasses in my cookies.

Mix in the usual cookie order (wet, then dry, then extras). Drop onto a cookie sheet, bake at 375 for 10-12 minutes. Instead of baking right away, you can freeze the lumps of dough and then either eat them frozen (good for summer when you don't want to turn on the oven!) or bake them as you need them. I've also frozen bags of finished cookies and that worked too. I think this makes about 6 dozen cookies. Once I made it and ended up with about 12 dozen, but I'm pretty sure I doubled it that time. :) Enjoy!
